As the weather starts to cool, a bounty of delicious autumn produce becomes available at the market. In this class we make the most of the short-lived chestnut season with a Portuguese-inspired dish of chicken braised in Port with chestnuts and pears. Grapes are paired with fennel seeds in a Tuscan focaccia, and eggplant and pomegranate are turned into a delicious salad. Finally, apples are at their peak and so we will finish with everyone’s favourite: a traditional apple pie and vanilla ice-cream.
